Ingredients

For the casserole
  • 2 can (20 oz) pineapple chunks in juice drained well
  • 0.5 cup granulated sugar
  • 6 tbsp all-purpose flour
  • 2 cup sharp cheddar cheese shredded
For the topping
  • 1 sleeve Ritz crackers about 32, crushed
  • 0.5 cup unsalted butter melted

Equipment

  • 1 2-quart baking dish

Method

  1. Preheat the oven to 350°F.
  2. Grease a 2-quart baking dish.
Make the casserole
  1. Whisk the granulated sugar and all-purpose flour together in a large bowl.
  2. Stir in the drained pineapple chunks in juice and shredded sharp cheddar cheese.
  3. Spread the mixture in the prepared dish.
Make the topping
  1. Stir the crushed Ritz crackers into the melted unsalted butter.
  2. Scatter the mixture evenly over the casserole.
  1. Bake for 25 to 30 minutes, until the filling is bubbling and the topping is golden brown.
  2. Rest for 10 minutes before serving.

Notes

Drain the pineapple very well so the casserole sets nicely. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the topping can lose its crispness. For a gluten-free version, use gluten-free all-purpose flour and crackers.
