Ingredients

Cranberry topping
  • 1 cup cranberries fresh
  • 0.25 cup granulated sugar
  • 2 tbsp orange juice
  • 1 tbsp water
  • 0.25 cup pecans chopped
  • 0.5 tsp rosemary chopped fresh
Brie
  • 1 wheel (8 oz) Brie

Equipment

  • 1 small baking sheet

Method

  1. Preheat the oven to 350°F.
  2. Line a small baking sheet with parchment paper.
  3. Combine the cranberries, sugar, orange juice, and water in a small saucepan over medium heat.
  4. Bring to a simmer and cook for 6 to 8 minutes, stirring occasionally, until most berries have burst and the mixture has thickened.
  5. Remove from the heat.
  6. Stir in the pecans and rosemary.
  7. Place the Brie on the prepared baking sheet and bake for 10 to 15 minutes, until the center feels very soft when pressed gently.
  8. Let the Brie rest for 5 minutes.
  9. Spoon the warm cranberry topping over it.
  10. Serve.

Notes

For the best texture, serve soon after spooning on the warm topping. Refrigerate leftovers for up to 3 days; do not freeze. For a nut-free option, omit the pecans.
