Ingredients

  • 24 dates pitted Medjool
  • 4 oz goat cheese softened
  • 12 bacon slices, regular-cut, cut in half crosswise

Equipment

  • 1 rimmed baking sheet

Method

  1. Preheat the oven to 400°F.
  2. Set a wire rack in a rimmed baking sheet.
  3. Fill each date with 1 teaspoon goat cheese.
  4. Wrap each date with half a slice of bacon and secure with a toothpick.
  5. Arrange the dates seam-side down on the rack.
  6. Bake for 20 to 25 minutes, turning them halfway through, until the bacon is browned and crisp.
  7. Let the dates rest for 5 minutes before serving.

Notes

For easy serving, arrange the dates seam-side down so the bacon stays in place as it cooks. Refrigerate leftovers for up to 3 days; freezing is not recommended. Turkey bacon can be used as a lighter swap.
