Method
- Set an oven rack about 6 inches below the broiler and preheat the broiler.
- Line a rimmed baking sheet with foil.
- Rub the poblanos with 1 teaspoon of the olive oil.
- Broil for 8–12 minutes, turning occasionally, until blistered and charred all over.
- Transfer the poblanos to a covered bowl and let them steam for 10 minutes.
- Peel off the skin, remove the stems and seeds, and chop the peppers.
- Heat the remaining 1 tablespoon olive oil in a 6-quart Dutch oven over medium heat.
- Add the onion and cook for 4–5 minutes until softened.
- Stir in the garlic, cumin, coriander, oregano, and cayenne and cook for 30 seconds, until fragrant.
- Add the chicken, broth, beans, green chiles, corn, salt, black pepper, and chopped poblanos, then bring to a boil.
- Cover and simmer over low heat for 18–22 minutes, until the chicken reaches 165°F in the thickest part.
- Transfer the chicken to a cutting board.
- Shred the chicken with two forks.
- Mash about 1 cup of the beans against the side of the pot.
- Stir in the cream cheese over low heat until melted and smooth.
- Return the shredded chicken to the pot.
- Stir in the lime juice and cilantro.
- Warm for 2–3 minutes before serving.
Notes
Keep the bowl covered for the full 10 minutes so the pepper skins loosen easily. Refrigerate leftovers for up to 4 days; freezing is possible, though the cream cheese may change texture slightly when thawed. For a dairy-free variation, use dairy-free cream cheese.
