Ingredients

  • 16 Medjool dates pitted
  • 4 oz goat cheese softened
  • 8 slices bacon regular-cut

Equipment

  • 1 rimmed baking sheet

Method

  1. Heat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  2. Open each date along its slit and fill with goat cheese, dividing it evenly among the dates.
  3. Cut each bacon slice in half crosswise, wrap one half around each date, and place the dates seam-side down on the baking sheet.
  4. Bake for 20 to 25 minutes, rotating the baking sheet halfway through, until the bacon is browned and crisp.
  5. Let the dates rest on the baking sheet for 5 minutes before serving.

Notes

For the neatest wrap, place each date seam-side down on the baking sheet. Refrigerate leftovers for up to 3 days; freeze for up to 2 months. Turkey bacon can be used for a pork-free option.
