Bacon-Wrapped Turkey Breast

Bacon-wrapped turkey breast is seasoned with thyme and garlic, then roasted until the turkey reaches 165°F. Overlapping bacon keeps the breast covered and turns crisp under the broiler if needed.

Ingredients

  • 1 turkey breast 3-pound, boneless, skinless
  • 1 tbsp olive oil
  • 0.75 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 tsp dried thyme
  • 10 bacon slices

Equipment

  • 1 9x13-inch roasting pan

Method

  1. Heat the oven to 375°F.
  2. Set a wire rack inside a 9x13-inch roasting pan.
  3. Pat the turkey dry.
  4. Rub the turkey with olive oil.
  5. Season the turkey all over with the salt, pepper, garlic powder, and thyme.
  6. Lay the bacon slices over the turkey, overlapping slightly and covering the top and sides.
  7. Tuck the bacon ends underneath and place the turkey seam-side down on the rack.
  8. Roast for 75 to 100 minutes.
  9. Check the thickest part with an instant-read thermometer after 70 minutes, until it reaches 165°F.
  10. Loosely tent with foil if the bacon browns before the turkey is done.
  11. If the turkey reaches 165°F before the bacon is crisp, broil it about 6 inches from the heat for 1 to 3 minutes, watching closely.
  12. Rest the turkey for 10 to 15 minutes.
  13. Slice the turkey.

Notes

For crisp bacon, make sure the bacon overlaps the top and sides, and watch closely during broiling. Refrigerate leftovers for up to 3 days; freeze for up to 2 months. Turkey bacon can be used as a leaner swap, though it may crisp differently.
