Method
Make the gratin
- Heat the oven to 375°F.
- Grease a 9x13-inch baking dish with 1 tablespoon of the butter.
- Bring a large pot of water to a boil and add 2 teaspoons of the salt.
- Add the Brussels sprouts and boil for 4 to 5 minutes, until just tender when pierced with a knife.
- Drain the Brussels sprouts well.
- Melt the remaining 3 tablespoons butter in a medium saucepan over medium heat.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk and cream, then simmer for 3 to 5 minutes, stirring, until the sauce thickens enough to coat a spoon.
- Remove the saucepan from the heat and stir in the remaining 1 teaspoon salt, the pepper, nutmeg, and Gruyere until the cheese melts.
- Fold in the drained Brussels sprouts and transfer the mixture to the prepared baking dish.
Add the topping and bake
- Stir together the panko, olive oil, and Parmesan.
- Scatter the topping evenly over the Brussels sprout mixture.
- Bake for 20 to 25 minutes, until the gratin is bubbling and the topping is golden brown.
- Rest for 10 minutes before serving.
Notes
For the best texture, drain the Brussels sprouts well before folding them into the sauce. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the cream sauce may separate. For a gluten-free variation, use gluten-free flour and panko.
