Ingredients

For the cheese log
  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 1 tbsp honey
  • 1 tsp lemon zest finely grated
  • 0.25 tsp kosher salt
For the coating
  • 0.5 cup dried cranberries finely chopped
  • 0.5 cup pecans finely chopped
  • 2 tbsp fresh parsley finely chopped

Equipment

  • 1 hand mixer

Method

Make the cheese log
  1. In a medium bowl, beat the goat cheese, cream cheese, honey, lemon zest, and salt with a hand mixer on medium speed until smooth, 1 to 2 minutes.
  2. Spoon the mixture onto a large piece of plastic wrap, shape it into a 7-inch log, and wrap tightly; refrigerate until firm enough to handle, 30 to 45 minutes.
Coat the log
  1. On a plate, combine the cranberries, pecans, and parsley.
  2. Unwrap the cheese log and roll it in the cranberry mixture, pressing gently so the coating adheres.
  3. Let the log stand at room temperature for 10 minutes before serving.

Notes

For the cleanest coating, chill the cheese log until firm enough to handle before rolling. Refrigerate covered for up to 3 days; freezing is not recommended because the texture may change. For a nut-free option, omit the pecans and increase the cranberries.
