Ingredients

  • 8 cup water
  • 1.5 tsp kosher salt divided
  • 1 lb green beans fresh, trimmed
  • 0.33 cup almonds sliced
  • 2 tbsp butter unsalted
  • 1 tbsp lemon juice fresh
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet

Method

  1. Bring the water and 1 teaspoon of the salt to a boil in a 4-quart pot.
  2. Add the green beans and boil for 3 to 4 minutes, until crisp-tender, then drain well.
  3. Toast the almonds in a dry 12-inch skillet over medium heat for 2 to 3 minutes, stirring often, until lightly golden and fragrant; transfer them to a plate.
  4. Melt the butter in the skillet, add the green beans, and cook for 2 to 3 minutes, stirring, until heated through.
  5. Stir in the lemon juice, remaining 1/2 teaspoon salt, and black pepper.
  6. Toss the green beans with the toasted almonds and serve.

Notes

For the best texture, drain the beans well before adding them to the skillet. Refrigerate leftovers for up to 4 days; freezing is not recommended because the beans can soften. For a dairy-free option, replace the butter with olive oil.
