Method
Make the dough
- Whisk the warm milk, yeast, and sugar in a large bowl.
- Let stand for 5–10 minutes, until foamy.
- Whisk in the egg and melted butter.
- Stir in the flour and salt until a shaggy dough forms.
- Knead on a clean counter for 8–10 minutes, until smooth and elastic; the dough will be slightly tacky.
- Grease the bowl with 1 teaspoon of the oil.
- Add the dough and turn it to coat.
- Cover and let rise at room temperature for 1–1 1/2 hours, until doubled.
Shape and refrigerate
- Grease a 9x13-inch baking dish with the remaining 2 teaspoons oil.
- Divide the dough into 12 equal pieces.
- Shape each piece into a smooth ball.
- Arrange the dough balls in the dish.
- Cover the dish tightly and refrigerate for 8–16 hours.
Proof and bake
- Take the rolls out of the refrigerator and let stand at room temperature for 1 1/2–2 1/2 hours, until puffy and nearly doubled.
- Heat the oven to 350°F.
- Bake the rolls for 20–25 minutes, until golden brown.
Finish the rolls
- Brush the warm rolls with the melted butter.
- Let them rest in the dish for 5 minutes before serving.
Notes
For the softest rolls, keep the dough slightly tacky rather than adding extra flour while kneading. Store covered in the refrigerator for up to 3 days; freeze baked rolls for up to 3 months. For a dairy-free version, use unsweetened plant milk and dairy-free butter.
