Ingredients

  • 4 slices bacon chopped
  • 1 yellow onion medium, diced
  • 1.5 lb fresh green beans trimmed
  • 2 cups low-sodium chicken broth
  • 0.25 tsp salt
  • 0.5 tsp black pepper

Equipment

  • 1 5-quart Dutch oven

Method

  1. Cook the bacon in a 5-quart Dutch oven over medium heat for 6 to 8 minutes, stirring occasionally, until browned and crisp.
  2. Add the onion and cook over medium heat for 4 to 5 minutes, stirring occasionally, until softened.
  3. Stir in the green beans, chicken broth, salt, and black pepper.
  4. Bring to a boil over medium-high heat.
  5. Cover, reduce the heat to low, and simmer for 45 to 60 minutes, until the beans are very tender.

Notes

For the most tender beans, simmer until they are very tender. Refrigerate leftovers for 3 to 4 days or freeze them for up to 3 months. For a lighter option, use turkey bacon in place of bacon.
