Method
Melt and coat the cereal
- Place the Rice Chex cereal in a very large mixing bowl.
- Add the white chocolate chips and unsalted butter to a microwave-safe bowl.
- Microwave on high in 30-second intervals until the mixture is smooth, stirring between each interval.
- Stir in the vanilla extract until fully combined.
- Pour the white chocolate mixture over the cereal.
- Gently stir until evenly coated, looking for every piece to be glossy with chocolate.
Powder and candy mix-in
- Transfer the coated cereal to a large zip-top bag.
- Add the powdered sugar to the bag.
- Shake until all cereal pieces are fully coated and look dusted white.
- Transfer to a serving bowl.
- Mix in the red and blue M&M's, red, white, and blue candy-coated chocolates, and patriotic sprinkles so the colors are evenly distributed.
- Let cool completely, until the coating has set and the mix feels firm rather than sticky.
- Serve immediately or store in an airtight container.
Notes
Pro tip: microwave the white chocolate in short 30-second bursts and stir between each one so it melts smoothly without scorching. Store airtight in the refrigerator up to 5 days; freezer: no. For a dietary swap, use dairy-free white chocolate chips if you want a dairy-free version while keeping the same method.
