Ingredients

Rice Chex cereal
  • 8 cup Rice Chex cereal
white chocolate chips
  • 12 oz white chocolate chips
unsalted butter
  • 0.25 cup unsalted butter
vanilla extract
  • 1 tsp vanilla extract
powdered sugar
  • 1.5 cup powdered sugar
red and blue M&M's
  • 0.5 cup red and blue M&M's
patriotic sprinkles
  • 0.25 cup patriotic sprinkles
red, white, and blue candy-coated chocolates
  • 0.5 cup red, white, and blue candy-coated chocolates

Equipment

  • 1 microwave-safe bowl

Method

Melt and coat the cereal
  1. Place the Rice Chex cereal in a very large mixing bowl.
  2. Add the white chocolate chips and unsalted butter to a microwave-safe bowl.
  3. Microwave on high in 30-second intervals until the mixture is smooth, stirring between each interval.
  4. Stir in the vanilla extract until fully combined.
  5. Pour the white chocolate mixture over the cereal.
  6. Gently stir until evenly coated, looking for every piece to be glossy with chocolate.
Powder and candy mix-in
  1. Transfer the coated cereal to a large zip-top bag.
  2. Add the powdered sugar to the bag.
  3. Shake until all cereal pieces are fully coated and look dusted white.
  4. Transfer to a serving bowl.
  5. Mix in the red and blue M&M's, red, white, and blue candy-coated chocolates, and patriotic sprinkles so the colors are evenly distributed.
  6. Let cool completely, until the coating has set and the mix feels firm rather than sticky.
  7. Serve immediately or store in an airtight container.

Notes

Pro tip: microwave the white chocolate in short 30-second bursts and stir between each one so it melts smoothly without scorching. Store airtight in the refrigerator up to 5 days; freezer: no. For a dietary swap, use dairy-free white chocolate chips if you want a dairy-free version while keeping the same method.
