Method
Prepare the dish and pasta
- Preheat the oven to 350°F and lightly coat a 9x13-inch baking dish with nonstick cooking spray.
- Bring a 6-quart pot of water to a boil.
- Add 1 tablespoon of the kosher salt and the macaroni, and cook 2 minutes less than the package directions for al dente; drain.
Make the cheese sauce
- Set aside 1/2 cup cheddar, 1/4 cup Monterey Jack, 1/4 cup Gruyere, and 1/4 cup Parmesan for the topping.
- In the same pot, melt the butter over medium heat.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk, the remaining 1 teaspoon kosher salt, dry mustard, garlic powder, paprika, and black pepper.
- Cook, whisking often, for 5 to 7 minutes, until the sauce thickens enough to coat the back of a spoon.
- Remove the pot from the heat and stir in the remaining cheddar, Monterey Jack, Gruyere, all the mozzarella, and the remaining Parmesan until melted and smooth.
- Add the drained macaroni and stir until evenly coated in the cheese sauce.
Assemble and bake
- Transfer the macaroni mixture to the prepared dish and sprinkle the reserved cheeses evenly over the top.
- Bake for 20 to 25 minutes, until bubbling around the edges and lightly golden on top.
- Let rest for 10 minutes before serving.
Notes
For the smoothest sauce, shred the cheeses freshly as specified. Refrigerate leftovers for 3–4 days; freeze for up to 2 months. For a gluten-free swap, use gluten-free elbow macaroni and a 1:1 gluten-free flour blend.
