Ingredients

  • 2 lb carrots peeled and cut into 1/2-inch-thick slices
  • 0.5 cup water
  • 3 tbsp unsalted butter
  • 2 tbsp honey
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet

Method

  1. Put the carrots and water in a 12-inch skillet and bring to a boil over medium-high heat.
  2. Cover, reduce the heat to medium-low, and simmer for 8 to 12 minutes, until the carrots are tender when pierced with a fork.
  3. Drain any remaining water.
  4. Add the butter, honey, salt, and pepper to the skillet and cook over medium heat for 2 to 3 minutes, tossing the carrots, until the butter melts and the carrots are glossy.

Notes

For an even glaze, toss the carrots until the butter has melted and they look glossy. Refrigerate leftovers for up to 4 days; freezing is not recommended. For a dairy-free option, use plant-based butter.
