Ingredients

apple filling
  • 1 Nonstick cooking spray for greasing the baking dish
  • 8 cup apples peeled, cored, and thinly sliced (about 3 pounds)
  • 0.5 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 0.25 tsp kosher salt
crisp topping
  • 1 cup old-fashioned rolled oats
  • 0.75 cup all-purpose flour
  • 0.75 cup light brown sugar packed
  • 0.5 tsp ground cinnamon
  • 0.25 tsp kosher salt
  • 0.5 cup unsalted butter cold and cut into 1/2-inch cubes

Equipment

  • 1 9x13-inch baking dish

Method

Assemble the apple filling
  1. Heat the oven to 350°F and lightly coat a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large bowl, toss the apples with the granulated sugar, flour, lemon juice, cinnamon, and salt, then spread the mixture in the prepared dish.
Make the topping and bake
  1. In a medium bowl, stir together the oats, flour, brown sugar, cinnamon, and salt, then work in the cold butter with your fingertips until the mixture forms coarse crumbs.
  2. Scatter the topping evenly over the apples and bake for 45 to 55 minutes, until the topping is golden brown and the filling is bubbling around the edges.
  3. Let the crisp rest for 15 minutes before serving.

Notes

For the best texture, use firm, tart apples. Refrigerate leftovers for up to 4 days; freezing is suitable. For a gluten-free option, use certified gluten-free oats and a gluten-free all-purpose flour blend.
