Ingredients

For the apple filling
  • 1 tsp nonstick cooking spray for the baking dish
  • 3 lb apples peeled, cored, and sliced 1/4 inch thick
  • 0.33 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp kosher salt
For the oat topping
  • 1 cup old-fashioned rolled oats
  • 0.75 cup all-purpose flour
  • 0.75 cup light brown sugar packed
  • 0.5 cup unsalted butter cold and cut into small cubes

Equipment

  • 1 9x13-inch baking dish

Method

Prepare the apple filling
  1. Heat the oven to 375°F.
  2. Lightly coat a 9x13-inch baking dish with the cooking spray.
  3. In a large bowl, toss the apples with the granulated sugar, lemon juice, cornstarch, cinnamon, nutmeg, and salt.
  4. Spread the mixture evenly in the prepared dish.
Make and bake the topping
  1. In a medium bowl, mix the oats, flour, and brown sugar.
  2. Work in the cold butter with your fingers until the mixture forms coarse, pea-size clumps.
  3. Scatter the topping evenly over the apples.
  4. Bake for 45 to 55 minutes, until the topping is golden brown and the filling bubbles around the edges and the apples are tender when pierced with a knife.
  5. Let the crisp rest for 20 minutes before serving.

Notes

For the best texture, use firm apples so they hold their shape as they bake. Refrigerate leftovers for up to 4 days; freezing is suitable. For a gluten-free variation, use a gluten-free all-purpose flour blend and certified gluten-free oats.
